Watermelon Slush



"fabulous and so easy.....add a shot of gin for the adults!!! "

INGREDIENTS


  • 3 cups diced watermelon
  • 2 tablespoons lime juice
  • 1 tablespoon sugar
  • 1 cup crushed ice
  • 1/2 cup water

PREPARATION

  1. Blend watermelon, lime juice, sugar, ice and water in a blender until smooth.

Pumpkin Dessert Bars


Ingredients:
  • 1-3/4 cups graham cracker crumbs
  • 1-1/3 cups Imperial Sugar® / Dixie Crystals® Granulated Sugar, divided
  • 1/2 cup butter, melted
  • 1 package (8 ounces) cream cheese, softened
  • 5 eggs
  • 1 can (15 ounces) solid-pack pumpkin
  • 1/2 cup packed brown sugar
  • 1/2 cup milk
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1 envelope unflavored gelatin
  • 1/4 cup cold water
  • Whipped topping and ground nutmeg, optional

Instructions:

  1. In a small bowl, combine graham cracker crumbs and 1/3 cup sugar; stir in butter. Press into a greased 13-in. x 9-in. baking dish.
  2. In a small bowl, beat cream cheese and 2/3 cup sugar until smooth. Beat in 2 eggs just until blended. Pour over crust. Bake at 350° for 20-25 minutes or until set. Cool on a wire rack.
  3. Meanwhile, separate remaining eggs and set whites aside. In a large saucepan, combine the yolks, pumpkin, brown sugar, milk, salt and cinnamon. Cook and stir over low heat for 10-12 minutes or until mixture is thickened and reaches 160°. Remove from the heat.
  4. In a small saucepan, sprinkle gelatin over cold water; let stand for 1 minute. Heat over low heat, stirring until gelatin is completely dissolved. Stir into pumpkin mixture; set aside.
  5. In a large heavy saucepan, combine reserved egg whites and remaining sugar. With a portable mixer, beat on low speed for 1 minute. Continue beating over low heat until mixture reaches 160°, about 12 minutes. Remove from the heat; beat until stiff glossy peaks form and sugar is dissolved.
  6. Fold into pumpkin mixture; spread evenly over cream cheese layer. Cover and refrigerate for 4 hours or until set. Garnish with whipped topping and nutmeg if desired. Yield: 15 servings.

Brownie Strawberry Trifle



Ingredients:

Servings:

Units: US | Metric
1 (20 ounce) box brownie mix (I use Betty Crocker)
1/4 cup water
1/2 cup vegetable oil
2 eggs
1 quart strawberry, thinly sliced, save one whole for decoration
2 (3 1/4 ounce) packages French vanilla instant pudding
8 ounces Cool Whip
hershey's shell chocolate syrup, as needed
Directions:

To make brownies:.
Heat oven to 350°F.
Grease bottom of a 13x9 inch pan.
Stir brownie mix, water, oil and eggs in medium bowl until well blended.
Spread in pan.
Bake for 28 to 30 minutes or until toothpick inserted 2 inches from side of pan comes out almost clean; let cool.
While brownies are cooling slice the berries and set aside.
Mix pudding with 2 cups of milk and whisk until thickened.
Fold in Cool Whip.
10 To layer, put brownie for first layer, add strawberries for second layer, drizzle with chocolate shell and the pudding mixture layer.
11 Repeat layers ending with the pudding mixture.
12 Decorate with the whole strawberry, cool whip and drizzle with the chocolate shell.
13 Chill until serving about 3 hours at least.

Banana Pineapple Green


Even greens can be frozen this way and used later for green drinks. The frozen pineapple and bananas blended perfectly with the spinach and made a completely tasty, filling, refreshing green smoothie!
Banana Pineapple Green Drink
  • 1 cup frozen banana*
  • 1 cup frozen pineapple*
  • 2 cups spinach
  • 1 cup water
1. Blend in high-speed blender until smooth.
* You can use fresh bananas and pineapple but I would add some ice.

Ginger Lime Daiquiri





Ginger Lime Daiquiri
Yield: 1 cocktail with plenty of simple syrup for several more drinks
Ingredients
    Ginger Simple Syrup:
  • ½ cup water
  • ½ cup sugar
  • ¼ cup ginger, peeled and sliced
  • Ginger Lime Daiquiri (makes 1)
  • 2 ounce golden rum
  • 1 ounces lime juice
  • 1 ounce ginger simple syrup
  • Dash fresh ginger, grated with a microplane or fine zester
Instructions
  1. Make the ginger simple syrup: Add water, sugar and ginger to a pan over medium-high heat. Stir continually until sugar has dissolved, remove from heat. Allow the ginger to steep until syrup has cooled to room temperature, about 20 minutes. Strain out the ginger and store simple syrup in a plastic squeeze bottle or jar in the fridge until ready to use (can be made up to a week ahead of time).
  2. Make the Daiquiri: Add rum, lime juice and ginger simple syrup to a shaker full of ice. Shake gently for 15-30 seconds, strain into a cocktail glass. Grate fresh ginger into the glass.
Notes
Ginger simple syrup also makes a fantastic addition to watermelon margaritas

CHERRY AND MINT GRANITA {WITH ROSE WINE}

1. Bring water and sugar to a boil. Boil hard for 2 minutes.
2. remove from heat and stir rose, lime zest and juice. Set aside.
3. Place cherries on a blender and add the sugar and lime mixture. Puree until smooth for 1 minute.
4. Pour mixture through a colander, pressing with a spoon to make sure you get all the juice . Discard the solids that remain.
5. Stir in fresh mint and pour the mixture in freezer proof dish. Freeze for an hour, when ice crystals would have formed around the edges. Stir with a fork to distribute crystals evenly. Keep doing this every 30minutes until the mixture is thorough and grainy, about 4 hours.

...and voila, you have fabulous reddish granita to end a nice fete!

Blueberry Collada Smoothie


1/2 cup frozen blueberries
2 ice cubes
1 1/4 cups water
2 Scoops Isagenix Vanilla Shake (or your vanilla protein of choice)
1 tsp PB2
1/2 tsp Coconut extract
Place all ingredients in a blender and whirl it together until smooth and creamy.
You can choose to garnish it with some coconut flakes or additional blueberries, although the blueberries do sink right to the bottom.
Delicious and totally refreshing, leaving my fingers with the faintest smell of coconut extract on them, which makes getting through the 9-5 that much easier.

Strawberry Mojito Cocktail Recipe


YIELD: 1
Adapted from The Berry Bible

ingredients:

  • 1.5 ounces of simple syrup
  • about 3 fresh strawberries
  • about 4-5 fresh spearmint sprigs (chopped if you prefer smaller mint pieces in your cocktail)
  • soda water
  • 1/2 lime
  • 2 ounces of light rum

directions:

1. In a chilled glass (about 10-12 ounces), muddle the simple syrup, strawberries and mint leaves together with the back of a spoon or muddler. Crush the strawberries and mint leaves well.
2. Squeeze the juice from the lime into the glass, add the rum and stir well. Fill glass with ice and top off with soda water.
3. Garnish with mint sprigs or strawberry slices.

  • 2 c Water
  • 1 lb Sugar
  1. Combine water and sugar in a medium saucepan. Heat until sugar is completely dissolved. Set aside to cool. After cool, store in refrigerator until ready to use.
