Calzone Bites easy recipe



Ingredients
15 Athens® Mini Fillo Shells
15 slices of pizza pepperoni
¼ cup pizza sauce
¾ cup finely shredded mozzarella
5 ounces pizza dough (1/2 tube)



Directions
1 teaspoon Italian seasoning
Place the shells on an ungreased baking sheet. Press one slice of pepperoni into each shell. Evenly distribute the pizza sauce among the shells followed by the cheese.

Roll out the pizza dough to the approximate size of the shell tray. With a small, round cookie cutter that is approximately the size of the shell, cut out 15 pieces. Place each piece of dough on top of the filling.

Sprinkle the shells with the seasoning and bake for 8-10-minutes in a preheated oven at 350°F. Serve immediately.
Yield: 15 appetizersTips:

Create a vegetarian version using your favorite vegetable toppings instead of pepperoni.

Top with a dollop of sauce and garnish with strips of pepperoni.

Portobello Mushroom Pizza




  • 4 tomatoes 
  • 4 large portobello mushrooms 
  • 4 cloves of garlic 
  • lemon 
  • 1 leek 
  • 1 onion 
  • fresh basil 
  • fresh parsley 
  • Olive oil
  • Salt 
  • Spray pan;
  • stuff mushrooms;

Top with cheese;

Bake at 400 F for 12 minutes.

Strawberry Pizza











When you mix up the crust it will seem a bit crumbly but just use your hands and form it into a ball.  It will come together nicely.






Just roll it out with a rolling pin on an ungreased cookie sheet or a baking stone will work too.


Bake for about 12-15 minutes or until lightly golden brown.
While it is baking and cooling mix up your cream cheese mixture and your strawberry mixture.  Use 1 cup of smashed strawberries.  I do mine in the food processor.
Cook the strawberries with sugar and cornstarch until it thickens and is glossy – will take about 5-10 minutes.  Cool.
After the crust is cool spread with cream cheese mixture you mixed up.










Add strawberry mixture and sliced strawberries.








The crust ends up being a bit fragile so it can be a bit messy to eat.  I just use my pizza cutter to slice it up.

Ingredients
    Crust:
  • 1 C flour
  • 1/4 C powdered sugar
  • 1/2 C butter
  • Filling:
  • 1 (8 oz.) cream cheese, room temperature
  • 1/2 tsp. vanilla extract
  • 1/2 C granulated sugar
  • 1/4 tsp. freshly squeezed lemon juice
  • Topping;
  • 1 C fresh strawberries, mashed
  • 4 Tbsp. granulated sugar
  • 1 Tbsp. cornstarch
  • 8 - 10 strawberries sliced.
Instructions
    Crust:
  • In a medium bowl, combine flour, sugar and butter.
  • Form into a ball with hands and press into a 14 inch ungreased pizza pan (I used my Pampered Chef pizza stone)
  • Bake at 325 degrees for 15 minutes. Cool.
  • Filling:
  • In a medium bowl, combine cream cheese, vanilla, sugar and lemon juice.
  • Spread on cooled crust.
  • Topping:
  • In a saucepan over medium heat, combine strawberries, sugar and cornstarch.
  • Simmer until thick and glossy. Cool.
  • Spread on top of cream cheese filling.
  • Cut fresh strawberries crosswise to make rounds that resemble pepperoni, place on pizza and serve

Mexican Black Bean Pizza


Ingredients
  • 1 1/4 cups shredded Mexican Blend cheese
  • 1/4 cup shredded Monterey Jack cheese
  • 2 tablespoons olive oil
  • 8 (6-inch) flour tortillas
  • 1 small onion, chopped
  • 1 (15 ounce) can BUSH’S® Black Beans, drained
  • 1/2 cup salsa, mild or spicy
  • 2 ounces canned chopped green chiles
  • 2 ounces pulled chicken
Instructions
  1. Heat oven to 350°F. Mix half the Mexican Blend cheese with the Monterey Jack cheese in a bowl; set aside.
  2. Brush a baking sheet with 1 tablespoon of the oil and arrange tortillas in a single layer. Puncture each tortilla a few times with a fork. Sprinkle remaining Cheddar cheese evenly over 4 of the tortillas, then cover each with a remaining tortilla. Bake 5-6 minutes or until browned slightly.
  3. While tortillas bake, heat remaining oil in a skillet and cook onions until browned. Add beans and partially mash with a potato masher or the back of a fork.
  4. Remove tortilla pizzas from oven and top each with bean mixture, spreading evenly. Top with salsa, green chiles, pulled chicken and cheese mixture.
  5. Return to oven. Bake until cheese melts, about 10-20 minutes.

BBQ Pizza



As we were coning off of the long weekend, I decided to use what I could to feed the family after a long work day. That included leftover Korean BBQ, a salad with fresh vegetables and grilled chicken, BBQ ribs, as well as some fried rice. Yes, I set out to get rid of leftovers. As I had made some pizza dough the day before, not realizing we were going over to my in-laws for dinner, I wanted to come up with some pizzas for freezing for the week as well. So as they ate, I made pizzas.
Let’s get started on this BBQ pizza.
Ingredients for the pizza dough: (Makes 3 skillet pizzas):
  • 3 3/4 cup of bread flour
  • 2 1/2 tsp active dry yeast
  • 3/4 tsp table salt
  • 3/4 plus a pinch of sugar
  • 1 1/3 cups of room temperature water
Ingredients for the BBQ Pizza:
  • 1/4 cup of pizza sauce
  • 1/4 cup of your favorite BBQ Sauce
  • 1 1/2 cups of shredded Mozzarella cheese
  • 1/2 jalapeño pepper, chopped
  • 1/2 small onion, thinly sliced
  • 1 cup of leftover BBQ ribs, meat chopped
  • 1 tbsp unsalted butter
  • small cast iron skillet
Now I have been making these cast iron skillet pizzas because for one they are awesome, and two, as much as I love a thin crust pizza, I also love a nice deep style pizza that has a crispy exterior and a really soft interior.
Make the dough by adding the flour, yeast, salt, and sugar. Mix. Add the water, and with your wooden spoons, or hands, mix until blended. I use my KitchenAid for this process to keep everything in the bowl during the rising process. Mix for about 30 seconds. The dough should be a bit stiff. Cover the bowl with a towel, and let it sit at room temperature until the dough has doubled in volume, about 2 hours. You can do this ahead of time as well, and place in an oiled container, big enough to house the dough, and place in the refrigerator overnight.
Once risen, divide into three portions. With one of the portions, add some flour to a large pastry board, and take a portion of the dough, and form into a large enough piece to place in your cast iron skillet, just enough to have the dough come up the sides a bit.
Preheat your oven to 475 degrees, and place your cast iron skillet in the oven to preheat.
Have your ingredients ready.
Once the oven is preheated, use kitchen mits to remove the extremely hot cast iron skillet from the oven.
Toss in the butter, and give that a swirl. Add the portion of rolled out dough and place on the bottom of the cast iron skillet, being careful not to burn yourself. Try to push and form the dough just so it creeps up the edge of the skillet.
Add the pizza sauce and barbecue sauce on top of the dough, and mix that with a spoon, covering the majority of the dough.
