summer macaroni and cheese




1 ear fresh corn
1 medium red pepper, diced, about 2/3 cup
1 small zucchini
2 Tablespoons unsalted butter, divided
Butter or nonstick cooking spray
1 cup uncooked small elbow macaroni
1 Tablespoons flour
1 1/4 cups milk
1 cup grated sharp cheddar cheese
1/4 cup parmesan
1/4 cup goat cheese
1/4 teaspoon dry mustard


Preheat oven to 375°F Grease a quart baking dish with butter, oil or nonstick cooking spray and set aside. Remove the corn from the cob and place in a bowl. Add the diced red pepper. Slice the zucchini, creating four long strips with green and discarding the center of the zucchini. Dice the green strips and add to the other vegetables. Heat a large non-stick pan, add one tablespoon of butter and cook the vegetables until tender crisp, about 3 minutes. Set aside.



Cook macaroni in a large pot of boiling salted water until outside is cooked but center is still firm. Drain in colander and rinse under cold water; set aside. 

In saucepan over medium-high melt the remaining tablespoon of butter. Whisk in flour and cook for one minute. Over low heat whisk in the milk and stir until the sauce comes to a simmer and thickens. Remove from heat and whisk in the cheese and dry mustard. Stir in drained pasta and vegetables. Spread pasta mixture into the prepared baking dish. Bake uncovered for 25 to 30 minutes, or until golden on top and bubbling. Let stand for 10 minutes before serving.

macaroni & cheese tips

1. When it comes to macaroni and cheese, the more cheese the better. My rule of thumb is double the volume of cheese to uncooked macaroni. There is no such thing as too much cheese.

2. If you want to add a crunchy topping Panko bread crumbs are ideal, because they are crisp right out of the bag (or box).

3. Undercook your pasta. If you don’t, it will be overcooked by the time you finish baking it. Drain it well and rinse it with cool water or it will keep cooking while you are assembling your casserole.

4. A pinch of dry mustard adds intensity and makes cheddar cheese taste even sharper.

5. Two cheeses are better than one! Three cheeses are even better than two. Different cheeses add more complexity. In addition to the classic cheddar try parmesan, gruyere, goat cheese or even brie.

Pumpkin Dessert Bars


Ingredients:
  • 1-3/4 cups graham cracker crumbs
  • 1-1/3 cups Imperial Sugar® / Dixie Crystals® Granulated Sugar, divided
  • 1/2 cup butter, melted
  • 1 package (8 ounces) cream cheese, softened
  • 5 eggs
  • 1 can (15 ounces) solid-pack pumpkin
  • 1/2 cup packed brown sugar
  • 1/2 cup milk
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1 envelope unflavored gelatin
  • 1/4 cup cold water
  • Whipped topping and ground nutmeg, optional

Instructions:

  1. In a small bowl, combine graham cracker crumbs and 1/3 cup sugar; stir in butter. Press into a greased 13-in. x 9-in. baking dish.
  2. In a small bowl, beat cream cheese and 2/3 cup sugar until smooth. Beat in 2 eggs just until blended. Pour over crust. Bake at 350° for 20-25 minutes or until set. Cool on a wire rack.
  3. Meanwhile, separate remaining eggs and set whites aside. In a large saucepan, combine the yolks, pumpkin, brown sugar, milk, salt and cinnamon. Cook and stir over low heat for 10-12 minutes or until mixture is thickened and reaches 160°. Remove from the heat.
  4. In a small saucepan, sprinkle gelatin over cold water; let stand for 1 minute. Heat over low heat, stirring until gelatin is completely dissolved. Stir into pumpkin mixture; set aside.
  5. In a large heavy saucepan, combine reserved egg whites and remaining sugar. With a portable mixer, beat on low speed for 1 minute. Continue beating over low heat until mixture reaches 160°, about 12 minutes. Remove from the heat; beat until stiff glossy peaks form and sugar is dissolved.
  6. Fold into pumpkin mixture; spread evenly over cream cheese layer. Cover and refrigerate for 4 hours or until set. Garnish with whipped topping and nutmeg if desired. Yield: 15 servings.

Healthy quiche


Pastry
~ 300g almond meal
~ 3 large free range organic eggs
~ Pinch of salt and black pepper
~ 4tsp linseeds
~ 4tbsp macadamia nut oil

Quiche Filling
~ 6-8 eggs (depending on how big your quiche dish is)
~ 75ml skim milk
~ 60g reduced fat feta similar cheese
~ 8 small mushrooms, sliced
~ ½ red capsicum, deseeded and diced
~ ½ red onion, diced
~ Bunch of aspargus, woody ends removed
~ 150g cherry tomatoes
~ Salt and black pepper

Oven
~ Preheat oven to 200ÂşC (or 180ÂşC fan forced)
To make the pastry
1. Combine the almond meal, eggs, linseeds pepper and salt together until a soft dough is formed. You may need to add a little more oil or almond meal depending on the consistency. The dough needs to be reasonably firm and not too sticky.
2. Line a 25cm pie or quiche dish with baking paper and grease with a little macadamia nut oil.
3. Flatten the dough with the palms of your hands and mould into the lined dish, covering the base and side with the dough. (You can roll it flat with a rolling pin but I find it a little difficult with a ground nut based dough)
4. Neaten the edges of the pastry case with a knife or your fingers.
5. Prick base all over with a fork. Place sheet of baking paper over pastry. Half fill with baking beans or rice. Place onto try and bake in the middle of the oven for around 10 minutes.
6. Remove beans and paper and bake for a further 5 minutes until base is just hard and a little golden.
To make the filling
1. Meanwhile, in a non-stick pan lightly fry the onion, capsicum and mushrooms until just soft.
2. Arrange the cooked vegetables in the pastry case.
3. Whisk the eggs and milk with a little salt and pepper.
4. Pour the egg mixture over the vegetables and arrange the asparagus and tomatoes in the egg mixture.
5. Crumble over the feta
6. Bake for 35 minutes in the oven until golden and just set in the middle.
Serving suggestions - Serves 8
~  Serve warm with vine roasted tomatoes and a green salad tossed with fresh lemon, salt, pepper and extra virgin olive oil (as pictured).
~ Serve cold as a healthy high protein snack.
~ You can also use almost any vegetables or cheese. Another delicious variation I like to make contains fresh flaked salmon, chives and low fat crème cheese.

Chocolate and Peanut Butter Parfaits




For the chocolate base:
1 cup milk, 2% or higher
1/3 cup sugar
2 tablespoons Dutch-processed cocoa
1 tablespoon cornstarch
1 teaspoon vanilla
1 egg yolk
1 tablespoon butter
1 ounce bittersweet chocolate, chopped
For the peanut butter base:
1 cups milk, 2% or higher
1/4 cup sugar
1 tablespoon cornstarch
1 egg yolk
3 tablespoons peanut butter
1 teaspoons vanilla
1 tablespoons butter
For the whipped cream:
1 teaspoon powdered gelatin
2 tablespoons cold water
1 pint (2 cups) heavy whipping cream
1/4 cup powdered sugar
2 teaspoons vanilla

In a medium sauce pan combine the milk, sugar, cocoa powder, cornstarch, and egg yolk.  Whisk until very well incorporated then cook over medium heat, stirring constantly, until it begins to simmer and thicken.  Remove from the heat and add the vanilla, butter and chopped chocolate and stir until melted.  Pour through a strainer into a separate bowl and cover with plastic wrap.  Allow to cool to room temperature.

Next, prepare the whipped cream.  Pour the gelatin into the cold water and allow to stand for five minutes, or until completely bloomed.  Heat for five seconds in the microwave, making sure it is melted, and cool to room temperature.  Pour the cold cream into the bowl of a stand mixer.  Add the powdered sugar and vanilla.  Whisk on medium low speed until the sugar is blended then increase the speed to medium high.  When the cream is softly whipped pour in the cooled gelatin.  Whip until the cream forms medium peaks.  Chill for thirty minutes, covered, in the refrigerator.

Gently stir both the chocolate and peanut butter bases until smooth.  Add 1/3 of the whipped cream to each base and fold until the mixtures are uniform in color.

Fill three piping bags with the peanut butter mousse, the chocolate mousse, and the whipped cream.  Pipe the mousse into your serving dishes/glasses in alternating layers, starting with chocolate and ending with whipped cream.  Chill the parfaits for at least two hours before serving.

Healthy Choc Mini Muffins



They actually include a cup and a half of green vegetables! You can slightly smell the broccoli when taken out of the oven but after that they tasted just like a choc muffin to me. Of course they still have sugar in them so not an all the time snack but really so clever!



2 Eggs
1/2 cup oil
3/4 cup brown sugar
1 cup broccoli finely grated
1/2 cup zucchini finely grated
1/2 cup white self raising flour
1/2 cup wholemeal SR flour
3Tbsp Cocoa powder 1 teasp baking powder
1 Tblsp low fat milk.

Whisk eggs, oil and sugar together in large bowl. Add vegetables, flours, cocoa, baking powder and milk and mix well. Spoon into greased (or paper lined) mini muffin trays and bake in a moderate oven for 15-20 minutes.

Oatmeal Chocolate Chip Cookie Cereal





Cookie Cereal
Prep Time: 10 minutes
Cook Time: 5 minutes
Total Time: 30 minutes
Yield: 5 cups of cookie cereal
Ingredients
  • 1/2 cup coconut oil (you can swap softened butter if you'd prefer)
  • 1/8 cup sugar
  • 1/4 cup brown sugar
  • 1 teaspoon vanilla
  • 1 egg
  • 1 1/4 cups white whole wheat flour or whole wheat pastry flour
  • 3/4 cup old fashion oatmeal
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 - 3/4 cup mini chocolate chips
Instructions
  1. Combine the whole wheat flour, baking soda and salt in small bowl. Beat the coconut oil, granulated sugar, brown sugar and vanilla extract in a large mixer bowl until creamy, about 3 to 5 minutes. Add the egg and beat well. Gradually beat in the flour mixture. Stir in the mini chocolate chips. Divide the dough in half and turn each dough out onto a large piece of plastic wrap or wax paper and form a very long and thin log with it, about 2 feet in length and about 1 inch in diameter. Seal up the bundle, roll it back and forth a couple times to smooth it out so one side isn't flat from resting on the counter, and place it in the freezer to chill for about 15-20 minutes. You just need the dough to firm up a bit so it is easier to roll into a bunch of little balls.
  2. Preheat the oven to 350 degrees F. Line two baking sheets with parchment paper or silpats.
  3. Remove the logs and using a sharp knife slice 1/2 inch slices of dough. If you prefer flatten cookies you can simply place the rounds of dough on the prepared baking sheets. If you want a rounder cookie (this is what I did for most of mine) roll the sliced cookie dough between your hands to make a small ball and place on the the prepared baking sheet.
  4. Bake for 5 to 6 minutes. Allow to cool completely before storing in an airtight container. Seve over milk, yogurt or eat by the handful!
